Salmon Patties Submitted by Old Republic Surety Ingredients 3 Tbsp Olive Oil ¼ cup Celery ¼ cup Onion ¼ cup Red Pepper (chopped finely and sautéed) 2 Tbsp Parsley 2 Tbsp Mayo 1 Tbsp Dijon Mustard 2 Cans Salmon 1 Egg Salt and Pepper Panko Bread Crumbs Instructions Remove any bones from Salmon. Mix everything except Panko in a bowl. Don't over mix. Make into patties, place in Panko, and coat well. Fry in olive oil 8 to 10 minutes trying to turn only once. They fall apart easily. Enjoy!
