Ingredients
- 12 Eggs
- ½ Cup Cottage Cheese
- 3 Pre-Cooked Turkey Breakfast Sausage Patties, Diced
- ¼ Cup Parmesan Cheese
- 4 Cloves Garlic - Peeled and roughly chopped
- ¹⁄³ Cup Red Onion
- 2 Cups Fresh Spinach
- 8 Cherry Tomatoes Halved Lengthwise
- Salt, Pepper, Oregano - To taste
Directions
- Preheat oven to 400°F.
- Beat eggs.
- Mix eggs with all ingredients except tomatoes.
- Spray a 12" Cast Iron Skillet with non-stick spray, and heat over medium heat.
- Pour mixture into skillet and cook until firm base is established - approximately 5 minutes.
- Transfer to oven and cook approximately 20-25 minutes (depending on how many fixin's you add in) or until the eggs are puffed and opaque.
- Arrange cherry tomatoes on top when the frittata is almost fully cooked.
- Serve and enjoy!
